On a Greek island the location decides more than the star rating.
On Santorini the choice is the caldera or the beach. Oia, Imerovigli and Fira sit on the cliff with the famous view and the prices to match; Kamari and Perissa are on the black-sand beaches on the other side, cheaper and a drive from the sunset. On Crete pick a region, not an island: Chania in the west, Heraklion in the centre, Elounda and the east — the distances are long. On Mykonos it is town or beach: walk to dinner, or wake up by the sea and take taxis at night. On car-free Hydra check how far the hotel is from the port; luggage goes up the lanes by porter or donkey.
Things to check when booking
Seasonality. Many island hotels open from spring to October and close in winter — out of season the choice shrinks sharply. Beachfront means different things. Use the Beachfront filter, then look at the map: some "beach" hotels are across a road. Adults-only hotels are common on Santorini, Crete and Rhodes; the filter finds them. Local taxes. A per-night fee set by the Greek state is added to the room rate and is often paid at the hotel.

Frequently asked
Where should I stay on Santorini — caldera or beach?
Stay on the caldera (Oia, Imerovigli, Fira) for the view and the sunsets, and budget for it; stay in Kamari or Perissa for the beaches and lower prices, and drive or take the bus to the cliff for the evening.
Are Greek island hotels open in winter?
Many are not. Island hotels commonly open from around April or May to October. Crete, Rhodes, Corfu and the city hotels of Athens and Thessaloniki have the most options year-round.
Is there a tourist tax on hotels in Greece?
Yes — a per-night fee set by the state, which varies with the type of accommodation and the season. It is added on top of the room rate and is often paid at the hotel; check the amount when you book.
